Vegan Vittles: Chocolate Peanut Butter Cookies

Recipe via Zsancia on Group Recipes.

Ingredients

3/4 cup – lightly packed brown sugar
1/2 cup – granulated sugar
1/2 cup – cocoa powder
1/2 cup – margarine (vegan friendly)
1/2 cup – natural peanut butter
1 1/2 teaspoon – vanilla extract
1 teaspoon – ground cinnamon
2/3 cup – unbleached all-purpose flour
1 teaspoon – baking soda
1/2 teaspoon – baking powder
Sprinkles for decoration (optional)

Directions

Preheat oven to 350 degrees Fahrenheit.
Combine sugars, cocoa powder margarine, peanut butter, vanilla extract and cinnamon.  Mix well.
Add flour, baking soda and baking powder.  Blend until fluffy.
Roll unto 1 1/2 inch balls, flatten slightly.
If adding sprinkles: pour sprinkles into a small bowl, dunk flattened cookies into sprinkles.
Place on baking sheet, cook for 6-8 minutes.
Let rest 5 minutes before removing from cookie sheet.

The recipe in action

This recipe makes total sense as is, through step 3, “Blend until fluffy.” This is what fluffy looks like in practice:

Kinda like a dirt cake.

I thought about adding some kind of binding agent like vegetable oil or more peanut butter, but then I tried forming balls with the mixture. It worked!

I needed to cook these for the full 8 minutes, and they turned out super tasty, despite a little bit of cracking. I do think I might add a tablespoon of oil next time to help these stick together better. Here’s the finished product (about 2 dozen cookies).

I think this trick translates to any tool with a thick handle, so leather working tools, punch needles, print making tools, etc. should work! What other tools am I, a needlecrafter, blanking on right now?

Pegboard storage is my favorite for craft supplies Pegboard storage is my favorite for craft supplies, so getting a few hung in my new studio has been a priority. Here’s my first attempt. 🔨

Details: This pegboard panel is for organizing my knitting needles, latch hook tools, sewing thread, etc. It doesn’t need to hold much weight, so I didn’t anchor this into a stud - just used basic drywall anchors. I’ve also got a set of two 2’x4’ panels for another spot in my studio, and those will need a stud/more than 3 drywall anchors. Wish me luck!
